Serves 1-2

2 eggs
1 banana
2 Tbs almond meal
1/2 tsp baking powder
optional: 1 tsp vanilla extract 


  1. Add all ingredients to a blender and combine until smooth. The mixture should be a nice pourable consistency, it’s normal if it’s thinner than regular pancake mix.
  2. Fry each pancake in a small amount of coconut oil, flipping once the bottom is golden brown.
  3. Serve with your favourite pancake toppings!
