Apple Cinnamon Bircher

Serves 4

1c oats
1/4 c sunflower seeds
1/4 c almond flakes
1/4 c coconut flakes
1/4 c walnut halves
2 grated granny smith apples
1 tsp cinnamon
1/2 c yoghurt of choice (goats, full fat greek, coyo)
3/4 c water


Mix oats, cinnamon, almond flakes, coconut flakes and walnuts together. Add the yoghurt, grated apples and water and mix to combine. Cover and put in the fridge for at least 2 hours. To serve top with an extra tablespoon yoghurt, a handful of berries and a drizzle of honey or maple syrup if desired.

This recipe will keep for 4 days in the fridge and makes a great brekkie on the go!
